Traditionally the main meal at Grandma’s home was the ‘Lunch’ which was served hot at around 12.00PM in the morning. The family sat down on a clean floor and ate, starting with the head of the family, followed by others.
It was a course meal starting with Rice, Sambar, Kootu, Poriyal, Rasam and Thairu (curd) with Appalams as accompaniments. It was served course by course, starting with sambar and finishing with curd. The Poorna Bhakshana is designed to recreate this experience. The attention to detail as was the practice by our Grandmas was in the right combination of accompaniments.
So, Mor Kozhambu had to be accompanied by Keerai Kootu and Parupu Usli or Enna Kathrikai. A Vetha Kozhambu had to be accompanied by a Urulaikizhangu roast / Cheppan kizhangu roast and Keerai/Podalangai Kootu. A random approach was unacceptable and that is the tradition that has been painstakingly captured at Paati Veedu.
